Comfort Food

Updated: Jun 13, 2020

Pretty soon, it is going to be time for our Pastured, Red Ranger Chickens to become "oven ready"! They have been enjoying the clover, alfalfa, and tasty insects as they travel through the pastures behind our heritage-breed Red Devon beef cattle. This not only makes for nutritious chicken, but also nutrient-filled soil! We love to implement regenerative, agricultural practices throughout our farm....just as nature intended.

After a long day of farming, we like to come in to some thing quick, but tasty and comforting. Chicken-Alfredo Pizza is one of our family's favorites! Enjoy!

Chicken-Alfredo Pizza

1 Devon Valley Farms Pastured Chicken, picked off-bone & shredded

1 Jar Alfredo Sauce (or Homemade Alfredo, see below)

2 cups Fresh Spinach Leaves, roughly chopped

16 oz. Mozzarella Cheese, Shredded

Parmesan, grated or shredded

Preheat Oven to 350 degrees. Make pizza crust as directed, but DO NOT bake yet. Spread Alfredo Sauce over crust. Top with Spinach leaves, Pastured Chicken pieces, and Shredded Mozzarella. Bake for approx. 8-10 minutes. Top with Parmesan before serving.

Homemade Alfredo Sauce

2 Tbsp. Butter (can use a Dairy-free margarine to make Dairy-Free)

2 Tbsp. Spelt or Rye Flour

1-2 cups Milk (almond milk works great for a dairy-free option)

1 Cup Parmesan, grated

Garlic Powder and salt to taste

Melt Butter in Cast Iron Skillet over medium heat; slowly whisk in the flour. Add milk in increments to avoid clumping; add just till you reach your desired consistency. Mix in Parmesan.

Lisa’s Quick Rise Pizza Crust

3 cups White Spelt Flour (or All-Purpose Wheat)

5 tsp. Baking Powder

5 tsp. Active Baker’s Rapid Rise Yeast

1-1/3 cups Warm Water

4 Tbsp. Olive Oil

4 Tbsp. Cane Sugar or Honey

Preheat oven to 350 degrees. Mix all ingredients together. Let sit for about 10 minutes. Spread onto greased cookie sheet or pizza pan; add sauce and toppings; bake for about 8-12 min. depending on how thick toppings are.

Makes 2 cookie sheet pizzas.

Note: Pre-Order for Pastured Chicken is once/year in April - Make a note on your calendar for next year!
